Kristin Kappler is a Program Coordinator at Brighter Bites in Brazoria County, TX (located just south of Houston) and she was actually born and raised in Lake Jackson, the largest city in Brazoria County.
Kristin graduated with a BS in kinesiology from the University of Texas at San Antonio, where she was a Division I Student-Athlete as a softball player, and a BS in nutrition from the University of Houston. While studying at the University of Houston, Kristin was awarded the Provost’s Undergraduate Research Scholarship (PURS) through the Texas Obesity Research Center. It was during this academic experience, when she learned about the research process and discovered a love for the study of food insecurity, especially among adolescents.
Beginning at a young age, Kristin developed a passion for cooking and creating meals. As an adult, she enjoys new food experiences, from creating new recipes in the kitchen with friends and family to staying true to her “foodie” roots by trying new up and coming restaurants.
Kristin loves the opportunity for food engagement that Brighter Bites extends to families and is proud to expand Brighter Bites to even more families in Texas.
When Kristin isn’t engaged as a foodie, she enjoys all things outdoors, including hiking, biking, and any kind of sport or team activity.
