Brighter Bites, Dallas
Catherine Miller is a Program Coordinator at Brighter Bites in Dallas. Born and raised in Dallas, Catherine was a member of Richardson High School’s Culinary Arts Magnet Program, where she competed in culinary competitions — winning the North Texas Iron Chef competition with her signature celery root bread pudding, managed her school’s in-house restaurant, and partnered with Medical City Hospital to develop healthy recipes for a children’s cookbook.
Catherine’s interactive learning experience in high school sparked an interest in edible education in college. As an environmental science and political science major at Rhodes College in Memphis, TN, Catherine studied how people interact with the food system and the inequalities that pervade it. On campus, she organized her fellow students to package, deliver, and serve over 5,000 pounds of food from the Rhodes cafeteria that would have otherwise gone to waste. Through internships with food justice organizations such as Grow Memphis, Bring It Food Hub, and Heifer International, she discovered the power of community in alleviating food insecurity.
Catherine is excited to be back in Dallas to combine her passions for food, experiential learning, and community development as a member of the Brighter Bites staff.
