Texas Corn & Blueberry Salad

INGREDIENTS

  • 2 ½ cups fresh corn (about 3 ears)
  • 1 cup fresh blueberries
  • ¼ cup cucumber, finely diced
  • 2 Tbsp lime juice
  • 1 tsp extra virgin olive oil
  • ¼ tsp salt
  • ⅛ tsp black pepper

DIRECTIONS

Cut fresh corn kernels from the cob.  Combine the corn, blueberries, and cucumbers in a large mixing bowl.  Combine lime juice, olive oil, salt, and pepper in a small bowl and whisk until combined.  Add dressing to corn mixture and toss until coated.
